    Light and Fluffy Waffles

    This waffle recipe makes such a light and fluffy waffle! The extra step of whipping the egg whites separately makes the waffle texture light and airy! Also, throwing them in a preheated oven creates a crispy waffle so you can then drench it in syrup. Yum!

    Ingredients for this waffle recipe

    • all-purpose flour
    • baking powder
    • salt
    • cinnamon
    • milk
    • vegetable oil
    • eggs, separated
    • sugar

    Equipment for the waffle recipe

    • waffle iron
    • 2 mixing bowls
    • spatula
    • hand mixer with whisk attachment

    Preheat oven to 300 degrees F.

    Your oven will be used to keep your waffles warm and also help them become more crispy.

    Combine your flour, baking powder, salt, and cinnamon in a medium bowl and whisk them together.

    Whisking your dry ingredients will evenly distribute your leavening agents like baking powder.

    In a measuring cup, combine your milk, oil, and egg yolks together.

    I found that using milk creates a richer and more flavourful waffle.

    Mix your dry and wet ingredients together just until combined.

    This step is crucial! The batter will be thick and there may be a few lumps, but continue whisking until all the ingredients are combined together. On the other hand, try not to overmix as it will create a tough waffle from the gluten formation of the flour. Just mix until there are no more lumps!

    In a clean and separate small bowl, whisk your egg whites using your electric mixer and slowly stream in the sugar. Continue whisking until you reach medium peaks.

    It is crucial to use a clean and grease-free bowl to whisk your egg whites. If there are any traces of fat, in the bowl or your beaters, your egg whites will not mix as well.

    Slowly fold in your whipped egg whites into your other mixture. Mix until just combined so you keep all the air in your mixture.

    You can fold your egg whites in part to further preserve the air in the egg whites. After this, you are done with your waffle batter!

    Follow your griddle’s instructions and prepare your waffles.

    As each waffle comes out of your waffle maker, place them on a baking sheet in your preheated oven. This way, it keeps the waffles warm and also helps to make them crispier.

    This waffle recipe is best served with whipped cream, butter, maple syrup, or fresh fruit!

    Ingredients
      

    • 125 g all purpose flour
    • 7 g baking powder
    • 2 g salt
    • 5 g cinnamon
    • 200 g milk
    • 30 g vegetable oil
    • 1 egg separate egg yolks from egg whites
    • 15 g sugar

    Instructions
     

    • Preheat oven to 300 degrees F
    • In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
    • In a measuring cup, mix together milk, vegetable oil, and egg yolk.
    • Combine the wet and dry ingredients together. Mix just until there are no more lumps. Set aside.
    • In a separate small bowl, begin whisking your egg white. Slowly stream the sugar when you see bubbles form. Continue whipping until stiff peaks are formed.
    • Gently fold in the egg whites into the other mixture. Fold until it is just combined.
    • Prepare your waffles according to your griddles instructions. As they come out of the waffle iron, place them into the oven on a baking sheet. Take them out when they are ready to serve.
